Chicken Burrito Bowl - Revisited

 

 

I haven't made this in a while - so last night I put it on our menu. 

I forgot to add avocado, olives, and tomatoes.  

Instead I had to get creative - so I  harvested the last of our red bell peppers and chopped them up for some color. It was good but a bit too sweet for my savory taste buds. 

All in all it was good. I did miss the missing ingredients. 

 


 


I just copied from my favorite Taqueria -

 

I. refried or black beans on the bottom of the casserole. 

2. Your favorite rice. It could be white, brown, spicy 

3. cooked chicken breasts and thighs diced

4. Salsa or Pico de Gallo

5. cheese - as much as you wish. I used pepper jack and cheddar

 

Baked it in a 350 oven for 20 minutes

 

I then added shredded cabbage

green onions,

Roma tomatoes

avocado,

cilantro

black olives

salsa 

sour cream
