Peach Pie from a can

It may not win first prize at the county fair but it's good.

Years ago when I was a divorced Mom - with 3 boys, I learned how to stretch a dollar and make do with what I had available.

I also was a food bank recipient - and many times you get so many cans of this and that, you have to be creative.

I still enjoy this canned version of a Peach Pie.

2 cans of peaches

Start by preheating your oven to 400 degrees. Prepare your crust if made from scratch.

I do not recommend this store-bought pie crust. It was slightly stale when I bought it and tore apart when I was placing it in the pie pan.

Homemade is always best. Next time, I will try the brand-name pie crust and see how that goes.

Or have my husband do the pie crust.

Open canned peaches and drain liquid into your saucepan and set aside.

Except for peaches and vanilla extract, combine all ingredients in a saucepan.

Stir constantly while cooking on medium heat. Stir until thickened.

Gradually stir in your peaches and heat them thoroughly. Now taste test your filling and adjust to desired sweetness.

Add vanilla extract to the mixture and then immediately pour in pie crusts.

Crimp edges of homemade pie crust and cut slits in the top of your crusts.

Put foil on the edges of the pie and bake in the oven for about 10 minutes. Turn the temperature down to 350 degrees and bake for an additional forty minutes.

Remove and cool before serving.
